Poffertjes are Dutch mini pancakes: fifty of them puff up at once on a copper-dimpled griddle, get flipped with a skewer, and go straight into a warm box with whatever the guest points at.

How an hour with the cart actually goes
The service
01
We arrive 90 minutes early
Cart, umbrella, warm lights, toppings bar and griddle. You don't lift anything and we need one standard outlet.

Batter goes down at your cue
Fifty pancakes rise at once. Nothing is pre-cooked, nothing sits under a heat lamp, and the smell does the inviting.

Every guest builds their own box
Twelve toppings, three drizzles, as many combinations as there are kids in the line. Kids come back three times — plan for it.

We leave the corner cleaner than we found it
Griddle off, cart wiped, trash bagged and out. The only thing left behind is the smell of vanilla.
